Healthy Ho-Ho-Holiday Cookies!


Ho-ho-ho! The holidays are upon us and while I know you ladies are all crushing the Sleigh the Holidays Challenge so far (keep up the inspiring, daily sound-offs on Insta!), and with the holidays comes a ton of fun, family, and food. Three of my very favorite things! But with the parties and food comes temptation and while I'm all for enjoying the holidays without regret, so I want to share some of my favorite holiday treats! Just wait and see…there are a lot more where these Healthy Ho-ho-holiday Cookies came from!

Some of you may know that I absolutely love (loved?!) Reese's Peanut Butter Cups, and I have shared my favorite healthy, dare I say more delicious, version here . Well, when I was growing up I always loved the peanut butter blossom cookies (ya know, the ones with the Hershey's kiss on top? Yummmm!), but I knew that there had to be a healthier, even more delicious way to enjoy these treats. I am so excited to share these scrumptious cookies with you!

Let me just say, these are SO YUMMY! These will make you three dozen cookies, and make everyone in your life give you hugs in gratitude, because they’re just that delish. A quick breakdown of the nutrition of each cookie: Calories 112, Fat 8.1 g, Carbohydrates 7.4g, Sugars 4.9 g, Protein 3.4 g.

These little darlings are as delicious as what you remember your grandma making, but they’re healthier for you! Better fats, paleo, and lower glycemic, too! With 36 cookies, this is the perfect amount for a holiday cookie exchange, too!

  • ¾ cup almond butter
  • 1 egg
  • ½ cup organic coconut sugar
  • 1 tsp pure vanilla extract
  • 1 cup blanched almond flour
  • ½ tsp baking soda
  • pinch sea salt
  • ½ cup Enjoy Life semi-sweet chocolate chips


  1. Preheat oven to 350° F and grease the mini muffin pan with coconut oil.
  2. In a large bowl, beat together the egg, almond butter, coconut sugar, and vanilla until smooth.
  3. In a separate bowl, combine the dry ingredients: almond flour, baking soda, and salt.
  4. Stir the dry ingredients into the wet until fully combined. (Don’t worry if the batter seems greasy- it’s just the almond butter and won’t impact the deliciousness of the cookies! Promise!)
  5. Scoop the dough evenly into the mini muffin cups.
  6. Use the back of a ½ tsp to make a dent in the center to form a cup.
  7. Bake for 8-10 minutes until just set.
  8. While cookies bake, put the chocolate chips in a microwavable glass bowl and microwave in 25 second increments, stirring each time, until melted and smooth.
  9. As you remove them from the oven, push the center back down a bit, as it will have puffed up during baking.
  10. Spoon the chocolate into the cookie cups. Let the filling cool and enjoy! (Store extras in fridge for up to 4 days.)
