LSF Super Bowl Bingo + Healthy Nachos

Healthy Nachos. The big game is coming up this Sunday but we're blowing the whistle on an unhealthy Super Bowl.

We know that buffalo dip is tempting, girl. And don't even get us started on the wings. How are you supposed to watch the game if you gotta keep your eyes closed to resist all the goodies?!

Healthy Grain-Free Nachos Serves 4

Ingredients
  • 2 large sweet potatoes
  • 1 cup black beans
  • 1-2 large handfuls spinach
  • 1 small red onion
  • 2 Tbsp apple cider vinegar 
  • 1 tsp taco seasoning
  • Fresh ground pepper
  • 1 bunch green onions, chopped
  • Sliced jalapenos (as much as you like!)
  • 1 avocado
  • Olive oil spray for pan
  • 1lb chicken chopped or ground turkey **optional
  • Vegan Cheese Sauce

Vegan Cheese Sauce

8 servings 

Ingredients:

  • 1 1/2 cups raw cashews
  • 2 garlic cloves
  • 1/4 cup nutritional yeast
  • 1 cup unsweetened oat or almond, add more as needed
  • 1 fresh jalapeno, chopped 
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • Juice of 1 lime
  • 1 teaspoon dijon mustard
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 450ºF and spray a baking sheet with olive oil. Slice the sweet potato into thin (about 1/4-inch) rounds and place them in a single layer on the sheet. Sprinkle with ½ tsp of the taco seasoning and fresh pepper, then bake them for 15 minutes. When the timer goes off, use a spatula to flip each slice and return to the oven to roast until tender, about 10 to 15 minutes more.
  2. While the sweet potatoes are cooking, prepare the toppings. Heat a skillet to medium-high and spray with oil. Add the red onion, garlic and jalapenos and begin to sauté. Once they begin to cook add the apple cider vinegar and continue cooking until tender. 
  3. If adding chicken or ground turkey, cook in the pan once you remove the onions with remaining taco seasoning. 
  4. When the sweet potatoes are cooked (about 15-20 minutes), spread them on a platter and add a drizzle of the cheese sauce. Then add the spinach,  black beans, onion mixture, chicken or turkey if using, fresh green onions, and avocado.
  5. Top with some more cheese sauce, salsa, and whatever else you want on top!

Directions:

  1. Soak cashews in water overnight. If short on time, bring water to a boil, add cashews and remove from heat. Let them soak for about 30 minutes then strain. 
  2. Add ALL ingredients to a food processor or blender until smooth.
