3 Guilt-Free Recipes You Need for Thanksgiving

Mulled Aperol Spritz

This is gonna be your new favorite festive holiday drink! It’s a healthier hack that will help cut some of the extra sugar without loosing the deliciousness AND brings all the holiday flavors together in one amazing guilt-free bevie.

INGREDIENTS

  • 3 oz Aperol
  • 2 oz prosecco
  • 1 oz mulled simple syrup
  • 2 oz club soda

Mulled Simple Syrup

  • ½ cup water
  • ½ cup monfruit sugar
  • ½ cup cranberries
  • 1 cinnamon stick
  • 1 sprig rosemary

*Bring all ingredients to a simmer for about 5 minutes or until all sugar and cranberries are dissolved. Strain and store in an airtight container.

Garnish with fresh cranberries, rosemary sprig, cinnamon stick and an orange slice

GREEN BEAN CASSEROLE


DIRECTIONS

For Topping
1. Preheat oven to 375°F.
2. Heat up oil In a large pan over medium heat. Cook onions until slightly golden and tender.
3. Remove onions from the pan and place them in a medium-sized bowl. Toss with almond flour until coated, and then season with salt and pepper.

For Casserole
1. Bring a large pot of water to a boil and add green beans. Cook for about 3-4 minutes or until just slightly tender. Then, quickly transfer the beans into an ice bath. Once they’ve cooled, remove them from the ice water and let them rest.

2. Heat oil in a large ovenproof skillet on medium- high heat. Add the onions and cook for about 5 minutes or until tender.
3. Add sliced mushrooms and season with the salt and pepper. Continue to cook them together for another 5 minutes or until mushrooms are tender.
4. Add in garlic, stirring for about 1 minute, and then transfer mixture to the bowl with the green beans.

INGREDIENTS
For Onion Topping
• 1 small onion, sliced
• 1 tbsp avocado oil
• Salt and pepper to taste
• 1⁄4 cup almond flour

For Casserole
• 1 lb. fresh green beans, trimmed
• 1 tbsp avocado oil
• 1 small onion, sliced
• 8 oz. mushrooms of choice, sliced
• 2 cloves garlic, minced
• 4 tbsp organic grass-fed butter
• 1⁄4 cup gluten-free or all-purpose flour
• 2 cups unsweetened nut milk or regular milk of choice
• 1 cup low sodium bone broth or vegetable stock
• Salt and pepper to taste. savory sides

5. Melt butter in the skillet used for the onions and mushrooms over medium heat. Add in flour slowly as you whisk and cook for about 2-3 minutes. Gradually whisk in the milk and stock, and bring the mixture to a low simmer. Continue to cook until it thickens up, about 4-5 minutes. Remove the mixture from the heat, then add green bean mixture and toss until everything is well combined.
6. Transfer everything to a medium-sized casserole dish.
7. Bake for about 20 minutes or until you start to see a bit of bubbling on the edges.
8. Then, top the casserole with the “fried” onions and continue to bake for approximately 10 more minutes or until golden brown.

SWEET POTATO ROUNDS

INGREDIENTS
• Sweet potatoes (washed and dried)
• Asparagus
• Olive oil
• Salt and pepper
• Goat cheese

DIRECTIONS
1. Preheat oven to 450°F. Meanwhile, slice sweet potatoes into thin rounds, and place onto baking tray with asparagus. Cover sweet potatoes and asparagus in olive oil or avocado oil, and add salt and pepper to taste.
2. Once oven has reached temperature, bake sweet potatoes and asparagus
for 10-12 minutes, and remove from oven.
3. Cut asparagus into inch-long pieces, and set aside.
4. Arrange sweet potato rounds, and once cooled, add goat cheese and asparagus evenly over the top.
