Sweet Potato Rounds With Roasted Goat Cheese + Asparagus
Ok. I’m admirably obsessed with sweet potatoes, but these sweet potato round are life and will have you coming back for seconds (and thirds!). But that’s a-okay because this is a totally guilt-free appetizer! This drool-worthy dish gives you free reign over the proportions because you honestly can’t go wrong with these ingredients!
Sweet potatoes (washed + dried)
Salt + pepper
Sweet Potato Rounds Directions:
- Preheat oven to 375 F. Meanwhile, slice sweet potatoes into thin rounds, and place onto baking tray with asparagus. Cover sweet potatoes and asparagus in olive oil or avocado oil, and add salt and pepper to taste.
- Once oven has reached temperature, bake sweet potatoes and asparagus for *** minutes, and remove from oven.
- Cut asparagus into inch-long pieces, and set aside.
- Arrange sweet potato rounds, and once cooled, add goat cheese and asparagus evenly over the top.
(Optional) To serve warm, place back in the oven for a few minutes until cheese has melted over sweet potato and asparagus.
