So yes…it’s Halloween. And it’s time for treats! It can be a complicated day if you’re trying to achieve some health goals and also #LiveGuiltless.
OBVIOUSLY we’re not reaching for your standard Reese’s cups and Sour Patch Kids (but…if you are going to have Halloween candy, we gotta give a shout out to our childhood faves). But If you’re after a healthy AND delicious AND protein-filled treat to indulge today, we’ve got an amazing option for ya…
Maple Latte Protein Bites!
Easy ingredients you probably already have, tons of protein, and literally DELICIOUS. While you might not quite get away with handing them out to trick or treaters, you will absolutely not miss the usual candy with these on hand.
1/4 cup finely chopped hazelnuts (you can use a different nut if preferred!)
2/3 cup almond meal
2 tbsp ground coffee
1/4 to 1/3 cup Vital Proteins Collagen Creamer in the Vanilla flavor, or delicious vanilla protein powder of choice (plus extra for coating)
1/3 to 1/2 cup almond or cashew butter (no stir works best)
1/4 cup maple syrup.
1/4 teaspoon vanilla extract
Process the hazelnuts through a high power blender for ideal consistency, or chop until fine. Pour into a large bowl. Add almond meal, coffee, an vanilla protein powder – mix. Stir in nut butter and vanilla until combined. As the very last step, pour in the maple syrup. Mix until thick and combined – it’s easiest to use your hands 🙂
Roll the mixture into balls, and place on wax or parchment paper. Place in fridge overnight to set. These protein bites are a perfect *caffeinated* boost in the AM, and guiltless dessert at night. Such a cozy addition to those crisp fall days!
