Oven Baked Salmon with Summer Salad


 Serving Size 1 ~ Simply double the recipe for two!


Ingredients for Salmon:

4-6oz Salmon Filet

1/2 Fresh Lemon (or orange)

Salt, Pepper, Parsley


Directions for Salmon:

1. Preheat oven to 450 degrees Fahrenheit

2.Rinse and pat salmon dry

3. Squeeze the juice of 1/2 of a lemon onto salon in non-stick baking pan

4. Season with pepper, a pinch of salt and parsley

5. Bake until cooked through, approximately 12-15min.

Ingredients for Summer Salad:

1-2 cups Mixed Greens

1/2 cup Fuit  (Berries, Citrus, Mango)

2Tbs Olive Oil

2Tbs Apple Cider Vinegar

2Tbs Raw Honey

1tsp Dijon Mustard

2Tbs fresh lemon juice (or orange)

Pinch of Salt and Pepper

**This will yield extra servings you can refrigerate and save

Directions for Salad Dressing:

1. Whisk all ingredients together

2. Add the fruit to the mixed greens

3. Use 1-2Tbs of the dressing and toss into salad mixture
