This time of year we all seem to be buried in work, school, and all the other activities that build up in fall. When I was going to school and working full-time I NEVER ate breakfast. I thought I was way to busy to deal with it and had no idea there were so many EASY ways to make it to go. So, now that I’m way smarter ?and realize what a huge impact food has on our energy, I wanted to share a super simple recipe I know you’ll love!
This is a no-excuses breakfast you can have hot or cold and, even though it’s technically “breakfast,” I honestly love it any time of day. It’s nutrient-packed, super delicious, and only takes like 3 minutes to make!
I actually found this recipe on PlateJoy, who you know I love, and have make it almost every week since.

Mix the chia seeds with ⅔ cup of water in a small bowl. Set it aside.
Grate the apples into a medium bowl with the biggest holes on your box grater. Mix the shredded coconut and almond milk into the bowl.
Coarsely chop the hazelnuts.. Add them to the bowl.
Add the chia seeds to the main bowl and mix it all up and enjoy.
