Busy babe breakfast. This time of year we all seem to be buried in work, school, and all the other activities that build up in fall.
When I was going to school and working full-time I NEVER ate breakfast. I thought I was way to busy to deal with it and had no idea there were so many EASY ways to make it to go. So, now that I’m way smarter ?and realize what a huge impact food has on our energy, I wanted to share a super simple recipe I know you’ll love!

This is a no-excuses breakfast you can have hot or cold and, even though it’s technically “breakfast,” I honestly love it any time of day. It’s nutrient-packed, super delicious, and only takes like 3 minutes to make!

Apple Hazelnut Chia Pudding
Ingredients:
- ⅓ cup of chia seeds
- 1 ½ apples
- ⅓ cup of unsweetened shredded coconut
- ⅔ cup of almond milk
- 3 tablespoons of hazelnuts (yum!)
- 2/3 cup vanilla yogurt
Directions:
Step one:
Mix the chia seeds with ⅔ cup of water in a small bowl. Set it aside.
Step two:
Grate the apples into a medium bowl with the biggest holes on your box grater. Mix the shredded coconut and almond milk into the bowl.
Step three:
Coarsely chop the hazelnuts.. Add them to the bowl.
Step four:
Add the chia seeds to the main bowl and mix it all up and enjoy.
So fast, delicious, and SO good for you! Dig in, babes!!

Do the apples brown at all after sitting for a day?
I usually keep mine in the fridge.
Made it this morning. I didn’t have apples. Yummy, reminded me how much I like clean food!!! Added pumpkin seeds and sliced almonds!
