Paleo Buffalo Cauliflower "wings"

I have a confession: I used to think wings were healthy. I mean it's just chicken right? With spices on it? How bad could it possibly be?

So wrong. I love a hot wing, but it's important to know what you're getting into. Because of how wings are usually prepared (including the crazy high-cal, high-preservative, high-sugar sauces they use on them), even a few can really set you back way more calories than you would ever have imaged. UGH.

Because of this, I took matters into my own hands and created a healthy buffalo "wings" recipe that actually has benefits!! It tastes the exact same and packs a nutrient punch.

Paleo Healthy buffalo cauliflower recipe for hosting a game day or a party! Perfect as a snack or appetizer.

PALEO BUFFALO CAULIFLOWER "WINGS" RECIPE

Ingredients
  • 1 cup almond flour, 1 cup coconut flour (or flour of choice)
  • 2 eggs
  • 1 tbsp. avocado oil
  • paprika
  • 1 tsp. garlic powder
  • buffalo sauce (I used Paleochef wing sauce)
  • ranch (I used Primal Kitchen)
  • 2 large heads of cauliflower
  • celery
  • carrots
  • a lil’ salt and pepper

Directions

Preheat your oven to 400° F and line a cookie sheet with foil or oil. In a large bowl, mix flour, paprika, garlic powder, and salt and pepper. Beat the eggs in a smaller bowl. Dip cauliflower florets in the eggs, then flour mixture. Place the florets on the cookie sheet and cook for 15 minutes. Take the cauliflower out and dip in buffalo sauce and continue to bake for another 30 minutes (flip halfway through).

Serve with a side of ranch, sliced celery, and carrots.
