This is one of my go-to healthy snack recipes when people are coming over to watch a movie, a game, or the Bachelor ?Easy, delicious, and full of fiber – totally LSF approved! Ever since we started working out of our house, we always need fast, easy, and healthy snack options to keep the people happy! Basically, this Black Bean Dip checks all the boxes and it’s totally perfect for game day or just a fun movie night in!
- 1 can black beans, drained and rinsed
- 1 cup greek yogurt
- 1 jalapeño, seeded and chopped
- a lil’ salt and pepper
- 1 large tomato, diced
- 1 cup cotija cheese
- grain free chips
- Optional toppings: green onion, cilantro, avocado
Preheat your oven to 325° F and spray a 1.5 liter baking dish with cooking spray. Blend the beans, greek yogurt, jalapeño, salt, and pepper until combined. Pour the mixture into your baking dish, then stir in 1/2 the tomatoes and 1/2 cup of cheese. Cover the dish with foil and bake for 10 minutes. Remove the foil and bake for another 15 minutes, or until cheese is bubbly. Add the remaining tomatoes, cheese, and any additional toppings if you’re feeling extra!
