Spinach & Strawberry Flatbread

Even if you're stumbling across this Spring Spinach & Strawberry Flatbread recipe in the middle of winter, I promise you, this will bring some sunshine into your life.

And the base of it all is a cauliflower crust. Cauliflower is having a bit of moment. It's pretty freaking versatile, and you can get cauliflower rice, bread, and — of course! — pizza crust in tons of stores these days. And that's super awesome because cauliflower isn't just a low carb substitute, it's high in antioxidants, fiber, and tons of vitamins and minerals.

When you add some leafy greens like spinach — which give you more vitamins, minerals, and fiber, plus an immunity boost — and strawberries — giving you evenmorefiber and antioxidants, plus supporting brain health — this flatbread is as powerfully healthy as it is pretty.

SPINACH & STRAWBERRY FLATBREAD RECIPE

Ingredients
  • 1/4 cup balsamic vinegar — plus 2 tbsp., divided
  • 1 cooked boneless skinless chicken breast (roughly 8 oz)
  • 2 frozen cauliflower pizza crusts
  • Olive oil
  • 1 1/2 cups sliced strawberries
  • 1 avocado, cubed
  • 1/2 cup loosely packed fresh basil leaves, chopped
  • 1 cup spinach leaves, chopped
  • 3/4 cup crumbled goat cheese (yum!!)

Directions

  1. To make a balsamic glaze for your flatbread, heat up 1/4 cup of the balsamic vinegar in a saucepan over medium heat. Then, simmer it until it cooks down and gets a syrup-like consistency (you should end up with about a tablespoon). This takes about 8 to 10 minutes. Watch it closely and take it off the heat when it gets syrupy.
  2. Brush the cooked chicken with the remaining 2 tablespoons of balsamic vinegar, then cut it into strips or small pieces. Do whatever you like best on top of your pizza!
  3. Prep the crusts according to the package directions. You'll probably need to cook them most of the way without toppings, but follow the instructions on the box! Basically, you're going to brush the top with a little olive oil and cook until just hot.
  4. When it's time to take the crusts out of the oven, get ready for the fun part: toppings! Arrange the strawberries, chicken, avocado, basil, spinach leaves, and goat cheese on your two crusts.
  5. Put the flatbreads back into the oven and broil them until they get a golden-brown look (so delicious!).

Remove your flatbreads from the oven and drizzle them with your balsamic glaze for that extra touch! Cut them into strips, arrange them on a plate, and you're ready to serve. Enjoy!
