Meatloaf muffins.
Ingredients:
2 lbs Lean Ground Turkey
3 Egg Whites
1 cup Quick Oats (or cooked quinoa for even more protein)
1 Small Onion Chopped
1/4 cup Sundried Tomato
2 Tbs No Salt Seasoning
1/2 tsp Dried Cumin
1/2 tsp Cayenne Pepper
1 tsp Paprika
2 Tbs Garlic Powder
Directions:
1. Preheat Oven 375 degrees
2. Spray muffin pan with olive oil or coconut oil
3. Mix all ingredients together in large mixing bowl
4. Use ice cream scooper to scoop into balls and drop into muffin tin
5. Set timer and bake for 40min
*Serving size 2 muffin*

Great recipe. Very simple to do and the ingredients list are what I already have in my kitchen, no need to run out to the local store. You’ve used ground turkey. Can ground beef or ground chicken be used?
Thanks! You can definitely sub out for any other protein, but I would stick to the leaner ones like chicken and turkey.

how much is 3 egg whites?
Hi Kayla! It would be the whites of 3 eggs if you are taking them from the egg itself or check the back of your egg whites carton to see what they measure 🙂
