Peaches & Cream Overnight Oats

These Peaches & Cream Overnight Oats are perfect for a summer breakfast because you can have them cold or hot and they’re ready to grab and go!

I actually used to hate peaches. Growing up we mostly ate nectarines and the fuzzy outside of the peach threw me off majorly. Now I actually really love them, but they have to be just right! Not too ripe that they are gooshy, but not too unripe that they are sour. Luckily peaches in summer are usually pretty perfect.

This recipe takes about 5 minutes to make and you can prep several jars for the week so you don’t have to think twice about having a healthy breakfast as you run out the door!

PEACHES & CREAM OVERNIGHT OATS RECIPE

Ingredients
  • 2 cups uncooked old fashioned rolled oats
  • 2 cups plain Greek yogurt
  • 1 cup REAL coconut milk (I used full fat, but you can use low fat as well)
  • 1 cup almond or cashew milk
  • 2 teaspoons cinnamon
  • 2 Tbs pure maple syrup
  • 1 tsp pure vanilla
  • 2 large peaches pitted and diced

Directions

  1. Mix all ingredients together in a large bowl. Divid into 4 airtight containers or mason jars and place in the fridge overnight. Enjoy cold or warmed and top with more peaches and/or nuts.
