chia pudding. So one thing that can be real tough during the holiday season is breakfast!

The only thing I ever want is warm, cozy pumpkin bread and a latte. Is this realistic everyday? Nope. Is this a balanced meal? Not really…unless we’re talking about my Paleo Pumpkin cake from Thanksgiving! But either way, you guys need options. So today we’ve got a recipe for Grinch-green matcha chia pudding that can be enjoyed hot OR cold. I kinda like it hot, personally, with a little drizzle of almond butter or honey? Yessssss!

Merry Matcha Chia Pudding

Quick, easy, and a little caffeinated. That’s what I’m talking about, babes.

Pudding. Quick, Healthy breakfast for holiday season. Gluten free, dairy free, vegan, and full of delicious matcha!

Ingredients:

1/4 cup chia seeds

1 1/2 cups coconut milk

2 teaspoons matcha green tea powder

1/2 tablespoon maple syrup, or 3-4 drops pure stevia extract

1/2 teaspoon vanilla extract

Dressing:

Optional toppings: blueberries, almond butter, shredded coconut. Whatever you’re feeling!

Directions:

In a medium bowl, add chia seeds and coconut milk. Stir.

In a small bowl, add matcha powder. Add some hot water and whisk with a fork until smooth.

Add the matcha mixture, maple syrup and vanilla to the chia seed mixture; combine. Place in the fridge overnight (or at least for a few hours!)

Best topped with shredded coconut, blueberries, and almond butter.

My boyfriend is allergic to Coconut and we try to eat healthy balanced meals together, would I be able to substitute the coconut milk for almond milk?
