Shrimp Scampi Zucchini noodles. Last week I got a spiralizer and have been using it like crazy!
I love spaghetti squash as a pasta substitute, but it can be a bit time consuming. Zucchini noodles are super easy! They literally only take about 3 minutes! This is a perfect dish when you are short on time and want to keep it clean. I made it for Ryan and I during one of my many spiraling tests and it was SO good, I had to share it with you guys! It’s my take on a paleo shrimp scampi with zucchini noodles and you can eat it 100% guilt-FREE

Ingredients:
2 Tbs olive oil
1 Pound Shrimp (deveined and peeled)
3 Cloves Garlic, minced
1/1-1 tsp Red Pepper Flakes
1/4 cup Chicken Stock (or Vegetable Stock)
4 Medium Zucchinis Spiralized (you can also thinly slice into “noodles”)
1 cup Baby Heirloom Tomatoes, diced
1/2-1 cup Artichoke Hearts
1 Lemon
1 Tbs Fresh Basil, chopped
1 Tbs Fresh Parsley, chopped
2 Tbs Garlic Powder
Sprinkle of Fresh Parmesan (optional)
Salt and Pepper to Taste ( go easy on the salt)
Directions:
♥ Heat oil in pan over medium-high heat
♥ Add tomatoes, stirring occasionally for about 3 minutes
♥ Add shrimp, garlic, artichoke & red pepper flakes, stirring for about 2-3 minutes
♥ Add the stock, juice of lemon and noodles and stir for 1-2 minutes
♥ Add a pinch of salt and pepper to taste
♥ Remove from pan and top with fresh basil and parsley (Parmesan optional)
*Serving size 4
Note: You can also substitute the shrimp for chicken, but you will just need to make sure you cook it through.
