Protein-packed Sweet Potato Skins

Skin is in, right?

I can remember a time when I just LOOOOOOVED a good sweet potato skin. You post up at a sports bar, order a beer, and get a side of potato skins with all their sour cream, cheesy goodness. And look, it’s all fun and games until someone gets bloated. Ultimately, potato skins are hardly the worst thing you could ever eat (assuming they aren’t fried and covered in melted cheese!) but this is LSF…and we never turn down an uplevel.

Squeeze in some more nutrients, throw in a healthy dose of protein, and swap out your cheese for delicious, salty cotija, and you have yourself a game day snack (or busy day lunch!) that checks all the boxes and leaves you feeling better – not worse.

Healthy sweet potato skins, an easy, protein-packed snack for busy days or game day!

Ingredients:

  • 4 sweet potatoes
  • 2 tbsp. oil 
  • 1lbs ground turkey
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 10 oz spinach
  • 1/4 cup cotija cheese
  • 1/4 cup greek yogurt
  • 1/4 tsp. garlic powder
  • a lil’ salt and pepper
  • 2 green onions

Directions:

Preheat your oven to 375° F and line a cookie sheet with foil. Poke the sweet potatoes with a fork (like a lot), then drizzle with oil. Wrap each potato in aluminum foil and place on the baking sheet. Bake for 45-60 minutes (until tender). Unwrap the potatoes and slice in half. Let cool.

Sauté the onion, spinach, and garlic. Then, add the turkey and season with salt, pepper, garlic powder. Place in a large bowl.

Scrape sweet potato out of the skin (leave a thin layer). Add the insides of the sweet potato and greek yogurt to the bowl of turkey and mix. Coat the potato skins with a drizzle of oil and place back in the over for another 15 minutes or until crispy. Remove and fill with the turkey mixture. Top with cheese and green onions.
