Ingredients:
1/4-1/2 cup cooked quinoa
1/2 cup fresh spinach
1/4 onion
1 fresh whole eggs
2 egg whites
1/4 ripe avocado
1 tsp coconut oil
Dressing:
- Heat coconut oil in sauté pan over medium-high heat
- Chop the ¼ onion into size of your choice
- Begin to sauté onion in pan. Adding pepper or other seasonings to taste
- Once onions are soft and lightly browned, add in the spinach and continue stirring for approx 1min
- In a separate bowl, beat whole egg and add egg whites until mixed
- Add egg mixture to vegetable mixture to cook
- Continue stirring and mixing the eggs and veggies
- Place cooked quinoa in a bowl. Once eggs are cooked, top quinoa with the mixture
- Slice the avocado and place it on top of the bowl
- Top with your favorite spices, hot sauces or salsa!
