Mexican Quinoa Bowl

Ingredients:

1/2 cup cooked quinoa
1- 40z. chicken breast
¼ grilled yellow onion
½ cup black beans
1 yellow pepper cut
½ ripe avocado

Directions:

  1. Cook Quinoa according to instructions
  2. Season chicken as desired (pepper, paprika, lemon juice, garlic)
  3. Grill chicken (approximately 5-7 min each side)
  4. Cut and sauté onion and pepper
  5. In a Bowl mix ½ cup quinoa, chopped chicken breast, grilled onions and peppers, black beans and top with avocado and your favorite salsa!

Hey Karen! I have never been much of a calorie counter to be honest, but I know some want the information. I will work on getting that information up for you 🙂 It is delicious though and fairly low in calories!

Hello! I’m interested in making this, but was wondering how many servings it makes so I can adjust it for meal prep :). I was kind of confused because 1/2 cup quinoa sounds like one serving, but 40 oz of chicken seems like a lot! But I also don’t cook much so 🙂

The picture looks like it has tomato, corn, and cilantro, none of which are in the recipe. Confused..
