Holly Jolly Chocolate Bark

It’s the holiday season! Yay! My favorite parts are the twinkly lights, the cozy music, and…DUH the food. But obviously, it can be tough to eat healthy when everyone’s throwing Christmas cookies in your face every twenty minutes. So I created a sweet little treat that tastes better than cookies (IMO) and makes sure you get some protein, fiber, and healthy fats. And really, that’s the key: have your cookies, have your hot cocoa. But challenge yourself to pair those treats with real nutrition. Not only will that fill you up a bit faster, it will make sure your cravings are balanced (which makes it a TON easier not to binge! Trust me).

Holly Jolly Chocolate Bark

This took like 15 minutes to make, and it’s sooo easy to keep in the freezer. Sweet treats that help you achieve your goals are the literal best.

Swap in this healthy chocolate bark for Christmas cookies for a sweet, gluten free treat


2 Cups Gluten free rolled oats

1 Cup nut of choice (Hazelnuts are amazing, especially for Christmas!)

1/4 Cup pepitas
2 tbsp ground coffee

1 teaspoon cinnamon

1 shake of nutmeg

1/4 Cup pumpkin puree

3 Tablespoons melted coconut oil

2 Tablespoons of liquid sweetener (honey, maple syrup, or stevia are best!)

2 teaspoons vanilla

1 Cup bittersweet chocolate

Recipe for delicious chocolate bark that's healthy and good for dealing with cravings!

Preheat the oven to 300 degrees. Then, in a medium mixing bowl, mix everything EXCEPT THE CHOCOLATE together and spread it onto a baking sheet. Pop it in the oven for 1 hour (checking and shaking the baking sheet a few times in there). Take it out of the oven and let it cool.

Now prep the chocolate. Melt it down in the microwave (at 20 second intervals, stirring in  between) until it’s liquid. Line a baking sheet with parchment paper, and spread the chocolate out over it.

Sprinkle the granola mixture over the top, and freeze.

I made this and it’s insanely DELISH!! I’m telling you that the Holly Jolly chocolate bark totally satisfied my sweet tooth!! This is a new staple in my house. I will keep some in my purse to curb my sugar cravings. I can’t say enough about this recipe! ❤️LOVE❤️
