Banana Nut Muffins. I am SUPER picky about my proteins, So many brands have TONS of fillers and artificial junk in them I just can’t deal.

If you have the Hot Body Meal Plan you know there are protein shake recipes throughout it. Especially if you are using my workout guide, it is so important to get plenty of protein every day to build lean muscle and burn fat. Vital Proteins Collagen Whey is the ONLY protein I recommend. There are definitely other comparable ones out there, but there’s is my FAVE!

When they came out with the Banana, Cinnamon & Vanilla Collagen Whey protein these muffins were a no brainer. You girls have got to try them! And they’re allergen free!

Ingredients:

2 cup almond flour

1/2 c protein

1 banana, mashed

2 tbsp honey

4 large eggs at room temperature

3/4 tsp baking soda

2 tsp Vanilla

4 tbsp coconut oil, melted

1 tsp cinnamon

1/2-1 banana, sliced

1/4 c walnuts, chopped

1/4 c cacao nibs

Directions:

Preheat oven to 375 degrees Fahrenheit. Mix first 8 ingredients until smooth using a hand mixer or blender. Gently fold in the sliced banana, walnuts and cacao nibs. Add to muffin cups and bake for 15-20minutes or until you can test with a fork or toothpick and come out clean.

Since they have a fair amount of sugar from the banana and honey, these are a perfect pre-workout snack! Enjoy 1 muffin in the morning or before a workout to help pack your day with nutrients and a little something sweet.
